Q

Low and no alcohol beer

How can alcohol be removed from a beer?

A
  1. By using a filter.
  2. By heating inside a vacuum to vaporize the alcohol without cooking the delicate fruit aomas of the beer.

In a vaccum, liquid boils at lower temperatures, and as such less heat is needed.

Q

Gluten free

What are the main techniques for producing gluten-free beer?

A
  1. Use malt from cereals naturally free of gluten (sorgham, buckwheat, rice).
  2. Use standard grains but then add enzymes to break down the gluten.

Technique #2 does not always remove all traces of gluten.
